Many a night, I would have a protein jones and make a huge can of chicken into chicken salad and eat with crackers or tortilla chips.

So now, when I work late (it's one of the few absolute quiet times I can focus on updating the site and responding to subscriber inquiries), what to eat.

Well what came first, the chicken salad or the egg salad?

It's not as fulfilling as chicken but it's working.

So who knows, maybe I'll make it two months

Wish me luck and remember to take TimeToVegOut.

Why, because we eat vegetarian at home all the time, so it was a matter of keeping that in mind as I go through my day.

The toughest part is at night. While we don't keep meat in the house, nor do I cook meat in the house, there have been occasions where I've had deli meats around. But my big thing was/is keeping cans of chicken breast and tuna so I can whip up a protein laden chicken salad when it's late and I'm hungry.

I made a very concerted effort exhaust my chicken supply and wouldn't you know it, the growlie tummy wanted my chicken salad.

It wasn't hard to resist, there's no chicken, but I expect I'll continue to have cravings and they'll be satisfied with other things (that night, I had peanut butter and cream cheese on crackers instead of chicken salad).

We'll see how this goes!

We have a vegetarian household and it's fine. But I'm an omnivore and when I go to work, or go out with my wife, I typically will have a meat dish.

So, as we embark on this journey to bring quality vegan and vegetarian deals to you, the subscriber, I asked myself a question, "Why not practice what you preach?" Can you ask veg*ns to buy these deals and not be a veg*n yourself?

Well the answer is yes, I can ask but why not.

So, I will be meat-free for the month of December.

It's not like I haven't done this before but this will be the first time I'll put my daily record (when i can remember) in a blog format here on TimeToVegOut.com so you, the subscriber, can track my progress and see how I'm doing.

Thursday the Odyssey begins!
